I love designing school lunch! Wait. Re-phrase that. I LOVE making lunch for AXEL, the best eater in the world.
While kids across America are eating the typical PB&J (I could be wrong), I get to send anything BUT in my kids lunch bag. How is he such a wholesome eater? I haven't a clue. It started somewhere between olives and avocados.
Today's lunch, while not my most creative, features Axel's new favorite find – Frozen Pomegranate seeds from Target. Affordable luxury, extremely healthy. So far this week his lunchbox has held "personal pasta salad," Jimmy Johns sub (provolone, guacamole and all the fixins), greek yogurt, banana bread (which he made himself before school), fruits, veggies and the occasional Peanut Butter and Honey sandwich (preferably on artisan bread).
I should really consider packing my own lunch and not eating in front of the refrigerator door. :(
